Eggnog Pumpkin Pie

So i love eggnog and love pumpkin pie. I decided to try my handon it and man it is o yummmy. Plus super easy.

Ingredients
1 can (15 ounces) solid-pack pumpkin
1-1/4 cups eggnog
2/3 cup sugar
3 eggs
1-1/2 teaspoons pumpkin pie spice
1/4 teaspoon salt
1 unbaked pastry shell (9 inches)
Directions
In a large bowl, combine the pumpkin, eggnog, sugar, eggs, pumpkin pie spice and salt. Pour into pastry shell.
Bake at 375° for 60-65 minutes or until a knife inserted near the center comes out clean. Cool on a wire rack. Refrigerate until serving.

I was able to get 2 pies out of it. One is going into the freezer for Christmas

Homemade Cranberry Sauce

Ok so I admit I love cranberry sauce from the can bu after seeing this recipe at realmomkitchen.com I knew I wanted to try it.

Simple but Delicious and my kids loved hearing the cranberry's pop

1 bag cranberry's

1 cup OJ or water

1 cup sugar.

Go trough the cranberry's ad pick out any yucky one.

Combine all ingredients bring to a boil over medium heat. Let boil for 10 minutes. Serve chilled or warm.

Yummy.

Jeannie's Lasgna

Ok I wish I could say that I created this great recipes bu I did not. I got it from
the Williams Family Blog.
This recipe is awesome I have made it twice but did modify it because we do not like the taste of curry.
Here is a quick and easy recipe.

6 lasagna noodles
1 lb ground beef
1 onion, chopped (did not use as hubby does not like onions)
1 jar spaghetti sauce (original or traditional)
1/2 tsp curry powder(did not use)
1 tsp oregano or Italian seasoning
8 oz cottage cheese
8 oz mozzarella cheese, shredded
8 oz cheddar cheese, shredded

1. Preheat oven to 350.

2. Cook lasagna noodles per package directions

3. Chop onion. ( if you plan on using)

4. Brown hamburger and onion.

5. Add jar of spaghetti sauce, curry powder, and Italian seasoning

6. Simmer until most of liquid is gone.(I do this for about 10 minutes)

7. Layer:
3 noodles, ½ meat sauce, ½ cottage cheese, ½ mozzarella cheese, ½ cheddar cheese.
Repeat layers.

8. Bake uncovered for 30-45 minutes

Enjoy.

Barbecue Beef

When I mad this I honestly did not think my husband would like it but he said it was one of is his favorites. I will put this on a different kinds of meat for variety.

1 1/2 lb round steak, cubed
1 cup barbecue sauce
1 cup ketchup
1 can beef broth
2 tbsp honey
1 pkg Lipton onion soup mix

In a large bowl, mix all ingredients. Transfer into crock pot and cover and cook on low for 8 hours. This can be served over rice or mashed potatoes.

3 Can Creamy Cheese Chicken

This a great meal. My husband loved it even though there were mushrooms in the recipe.

4 chicken breasts
1 tsp salt
1.4 tsp pepper
1 tsp garlic powder
1 can cream of chicken soup
1 can golden mushroom soup
1 can cream of cheddar cheese soup
1 carton sour cream

Season the chicken breast on both sides with salt, pepper and garlic. Put in crock pot. combine all 3 soups until smooth. Pour over chicken and cook on low for 7 hours. 15 minutes before serving add the sour cream and mixed until blended. Cook on low an additional 10 minutes.

Chili

This has now been added to our monhly meal planner. The only thing I did not use was the corn beacuse my hubby doen not eat veggies.

1 can black beans draind
1 can corn, drained
22oz can crushed tomatoes
1 pkg taco seasoning
1 pkg ranch dress mix(dry)
1 lb ground beef

Brown gound beef and drain. Put all ingredients in crokpot on low for 2-4 hours.

Ranch Pasta with Hamburger

This is just like the hamburger helper kind but not as strong in the the ranch flavor which my husband did not enjoy when we tried the hamburger helper flavor.

1 lb ground beef
2 cloves garlic
salt and pepper to taste
1 box pasta( any kind of small tube)
1 cup milk
1 up sour cream
1 pouch dry ranch mix

In a large pot cook pasta according to directions. In a lg skillet brown meat and garlic, add sat and pepper. Drain. In a medium bowl combine the milk, sour cream and ranch mix until mixed. Drain Pasta and add meat to pasta pot. Add sauce and let simmer 5 minuets until thickened.

Mexican Tuna Fish Salad

Here is another one of my modifid recipes I use while on Alli.

You can delete mayo and add anything you like

2 cans tuna fish in water
2 celery stalks thinl sliced.
1/4 cup red onion
4 tbsp salsa
4 tbsp mayo
salt and pepper to taste.

Combine all and let refrigrate for a couple of hours.

Egg Salad Modified

So last Monday I decided to start taking the Alli pill. I have been doing good but today was bad as I gave into my craving for onion rings and cheese cake.Rather than giving up on my diet I will back on track tomorrow. So tonight I wanted to look or recipes using eggs and tuna and not nessecarilry together.
Tonight my first recipe will be the egg salad recipe. I will post the tuna and some other recipes later this week. \

Egg Salad
4 EGGS
1 CELERY stalk
2tbsp red onion
1 1/2 tbsp mayo
1 tsp mustard( This is my modification.

Cook the eggs for 20 minutes. During this time chop up all the veggies. When egg are don soak in a ice bath for 10 minutes. Then peel and finally chop all w egg whites and only 2 egg yolks. Combine well and add little bit of pepper. Let refrigerate for 2 hours.

Ranch Pork

I have made this several times and everyone loves this meal even my picky hubby.

Ranch Pork

4 pork chops(Can use bonein)
1 Can Cream of Chicken soup
1 packet ranch dressing mix
1/2 Can Water

Combine cream of chicken soup and ranch dressing. Place Pork in crock pot. Cover the meat with the soup. Then pour water over the soup. Cook on high for 4 hours or on low for 6 hours.

I serve with roasted potatoes which I will post tomorrow.

South of the Border Chicken and Pasta Skillet

This recipe comes from Sam's Club Recipes.

While I like this dish my husband was not a fan of it because of the salsa.The next time I make it I will use a can of tomato sauce that way he will eat it.

South of the Border Chicken and Pasta Skillet
2 Cups medium size pasta
2 chicken breast skinless and boneless cut into inch cubes
16 oz salsa
4 oz cream cheese cubed
1/4 tsp cumin
1 cup cheese

Cook pasta according to directions. Meanwhile cook chicken on medium heat for 6 minutes or until juices run clear. Add salsa, cream cheese and cumin. Simmer on medium low for 6 minutes or until cream cheese is melted.
Drain Pasta; add to skillet along with half of the cheese. Simmer 3 minutes.Top with remaining cheese and remove from heat and let stand 5 minutes.

I served it with broccoli and garlic bread.

Cowboy Lasagna

I made this yummy recipe last night. Hubby did not like it but he is too picky of an eater.
Very simple and quick meal!!

Cowboy Lasagn

2lbs Ground Beef
1 Onion Chopped
1 can enchilada sauce
1 bag grated cheddar cheese
1 tbsp chili powder
2 cans cream of chicken
1 bag tortilla chips

Brown ground beef, add chili powder and choped onion. Add soup and enchilada sauce, mixing well. In a 2 quart casserole dish, layer beef mixture, chips, cheese, beef mixture, chips, and end with cheese. Bake at 350 for 40 minutes.

Serves 5

Smores Cookies

Around here we are getting ready to move!! Due to this I have been using up everything I have in the house. Well I had a bag of marshmallows that I needed to use!! After searchign several recipes I found this recipe at Chocolate chip marshallow cookie which I renamed smores. I only had a tiny cookie due to my diet but man they are wonderful!! I will be giving most of these away to friends but I am sure my kids and husband will love!! I did modify some and will include in Italics!


INGREDIENTS
1 cup shortening (I used butter)
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs (used egg beaters)
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups semisweet chocolate chips
3/4 cup chopped walnuts (did not have any)



DIRECTIONS
In a mixing bowl, cream shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture. Stir in marshmallows, chips and walnuts. Spread into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 350 degrees F for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars

Cinnamon Sugar Donut Muffins!!

So I am a huge fam of cinnamon sugar donuts so when I found a recipe for sugar donut muffins and knew I had to modify and then try them. I will inculde the origianal recipe with my modifiations in italics. Enjoy

Sugar Donut Muffins
3/4 cup sugar
1 large egg
1 1/2 cups all purpose flour
2 tsp baking power
1/4 tsp salt
1/4 tsp ground nutmeg i used a mixture of sugar, cinnamon and a little it of butter
1/4 cup vegetable oil next time I will use applesauce
3/4 cup milk (low fat is fine) soy milk was used
1 tsp vanilla extract

2 tbsp butter, melted i used I can't believe it not butter spray
1/2 cup sugar, for rolling

Preheat oven to 350F.

Lightly grease a muffin tin with cooking spray or vegetable oil.

In a large bowl, beat together sugar and egg until light in color.In a small bowl, whisk together flour, baking powder, salt and nutmeg. Pour into egg mixture and stir to combine. Pour in vegetable oil, milk and vanilla extract.Divide batter evenly into 10 muffin cups, filling each about 3/4 full.Bake for 15-18 minutes, until a tester inserted into the center comes out clean.
While muffins are baking, melt butter and pour remaining sugar into a small bowl.When muffins are done, lightly brush the top of each with some melted butter, remove from the pan and roll in sugar. Cool on a wire rack.
Makes 10 muffins.

Recipe Review: Strawberry Shortycakes

So here is another recipe from the 200 recipes under 200 caliores. Last week when I went to the grocey store I found 2 lbs of strawberries for 3.88 so i decided to buy some since one of my girls loves strawberries. This recipe is like strawberry shortcake but smaller and without all the caloires.


Strawberry Shortycakes
12 Servings


3/4 cup angle food cake mix
3/4 cup cool whip thawed
3/4 cup strawberry perserves
3/4 cup sliced fresh strawberries

Preheat oven to 375

Line a 12 cup muffin pan with baking cups. You must use these as they are very sticky

Place cake mix ina medium mixing bowl. Add 1/2 cup water and mix for 2 minutes.

Evenly distruibute cake mix among the liners. Bake for 12-15 minutes.

Allow cupcakes to cool completely, then carefull peel cupcakes from baking cups and plate them. Spread 1 tbsp of perserves over each cupcake, top with 1 tbsp cool whip, Put strawberries on top!!Enjoy

My thoughts::
I love, love these. They are very mosit, have a great amount of flavor plus they are low in caliores which is always a great thing. Also they are pretty thrifty becasue a box can make 3 dozen which you don't need to make at once. Also, my kids loved them. The only thing I don't like about them is how sticky they are, I am going to make a pan of it and then cut it out after words with a cup. Might make a differnce

Yummy Chicken Recipe

So I have several chicken recipes that I have been wanting to try and this one is so yummy it will defintly be kept in my recipe collection. I am not sure what blog I got it from but I have to say this is one of the better chicken recipes. It is actually 2 recipes but the prep and cook time is 20 minutes.

Super Fast Spice Rubbed Chicken

1 lb. boneless, skinless chicken (breasts, thighs, tenderloins)
1/2 teaspoon each:
salt
pepper
cumin
chili powder (you can use chipotle for smokiness)
paprika (you can use smoked for more smokiness)
garlic powder
coriander
2 tablespoons brown sugar
Ideally, you're going to add all your spices to a bowl, mix them up and sprinkle them on the chicken. I said ideally. What I really do is grab the spices out of the cupboard, sprinkle them on one side of the chicken, rub it in, flip it over and repeat. Please don't measure and use your favorite spices, of course. Now, preheat a grill (indoor or outdoor) a saute pan or the broiler. You want a good high heat. Spray your cooking surface with no stick cooking spray, or add a bit of oil. Grill or saute for about 6 minutes per side. Broil on a foil lined cookie sheet about six inches from the source for about five minutes per side. Always check the center to be sure it is no longer pink. Let rest for five minutes.
I was able to use this chicken in my actual dinner recipe and plus put half of the chicken in the freezer for later use. I used 1.37 lbs of chicken tenderloin.
This recipe is one I made for dinner. I served it with some chips and broccoli. So yummy!!
Mini Barbecue Chicken Sandwiches
4 English muffins, preferrably whole grain, split and toasted
2 tablespoons mayonnaise or ranch dressing, regular or low-fat
8 paper thin red onion slices
2 cups fully cooked chicken, (USE YOUR LEFTOVER SPICE RUBBED CHICKEN)
8 tablespoons smoky barbecue sauce
1 cup sharp cheddar cheese, grated1 tablespoon chopped cilantro

Preheat broiler. Line cookie sheet with foil. Spread toasted muffins with mayonnaise and place on prepared baking sheet. Top muffins with onion slices and chicken. Drizzle each half with a tablespoon of barbecue sauce. Sprinkle with cheese and broil until cheese is melted and bubbly. Sprinkle with cilantro and serve.

Big fat bluebery Muffins

So my children love muffins but lately it seems like we have been going through a pack of 18 muffins in a week so today I decided to try these muffins. I made them two different ways. The first batch was made with whole wheat flour and splenda the second time I made them with white flour and sugar defintely liked the second version better. The recipe made 6 big size muffins and then 12 mini muffins.

I did get this recipe from 200 recipes under but it is not under review just wanted to see how they came out.

Big Fat Blueberry Muffin(orignal recipe)(only made 6)
1 cup whole wheat flour
1 cup blueberries
1/2 cup vanilla soy milk
1/4 sugar free panckae syrup
1/4 cup egg beaters
1/4 cup splenda
3 tbsp brown sugar
2 tbsp butter
2 tbsp sugar free applesauce( Use blueberry delight if you can find)
1 1/2 tsp baking powder
1/2 tsp vanilla
1/4 tsp salt

Directions
Preheat oven to 400

In a medium bowl, comine flour, splenda, brown sugar, baking powder, and salt. Mix well

In another bowl combine soymilk, syrup, egg beaters, butter, applesauce, and vanilla. Mix until blended. Do not worry if butter does not break up.

Add dry ingredients into teh wet ingredients until blended. Then fold in blueberries.

Line a 6 cup muffins with bakign liners or spray with cooking spray. Evenly distribute batter among the 6.

Bake for 22 minutes.

Recipe Review: Fuji Fritters

So for my first review I was doubting what to do and after much debate I chose this recipe fro two reasons. The first is because my daughter needed something to take to school for teacher appreciation and the first day is apples, The second reason is because I have never made a fritter. It was so easy and will be making these again.







Before Baking



Fuji Fritters.


Makes 12




For Apple mixture


3 Cups fuji apples, peeled and cubed


3 tbsp splenda


1 tbsp cornstarch


1 tsp cinnamon


1 tsp vanilla



For Fritter Base


1 1/3 cup regular oats ( not instant)


2/3 cup Bisquick Heart Smart Baking mix


2/3 cup vanilla soy milk


2 tbsp brown sugar not packed


1 1/2 tbsp butter


1 tsp baking powder



Directions


Preheat oven to 400


Place apples chunks in a medium microwave safe bowl with 1/4 cup water. Cover and microwave for two and half minutes. Drain and set aside


In a medium unheated pot, combine splenda, cinnamon, vanilla, and cornstarch with 1/2 cup cold water. Cook over medium heat, stir occasionally. Continue to cook and stir until thickened to a caramel sauce like consistency. Remove pot from heat and stir in apple chunks.


In a large mixing bowl, combine all of the ingredients for fritter base until mixed well. Fold apples into the fritter base.


Spray two large baking sheets with nonstick spray. Evenly distribute batter into twelve mounds. They will expand.


Bake for 10-15 minutes(I did 13) minutes until a toothpick is inserted and comes out clean.

My Thoughts





I did not have any oats in the house and was not going out with 2 kids in a storm so I used bisquick for the whole recipe. I feel that they came out wonderful. I am not a big fan of apples so it was hard for me to truly like but my kids love them.Hopefully her teacher likes them.

Healthy Dinner that My kids Like!!!

So when I do my grocery shopping I always buy some tiliapia. This fish is a mild fish and does not have a fishy taste. My oldest child can eat two pieces. My husband does not like but will eat it because he knows it is good for them and him. Tonight I paired it with a brown rice recipe that I loved. Definitely will be making again.

Tilapia with Garlic Butter
Ingredients:
2 tablespoons butter ( I used 4 tsp butter and 2 tsp olive oil)
2 cloves garlic, finely minced( I used freeze dried and garlic powder)
dash pepper
dash salt
pinch dried dillweed or parsley
dash paprika
4 tilapia fillets ( I had 6 which is why I had more butter)

Preparation:In saucepan, combine butter, garlic, pepper, salt, dillweed, and paprika. Heat over low heat until butter is melted and starts simmering. Remove from heat. Brush a little of the butter mixture in the bottom of a shallow baking dish (line baking dish with foil, if desired) then place tilapia fillets on the buttered area. Brush top of each tilapia fillet with the seasoned butter mixture. Bake at 350° for 12 to 15 minutes, until tilapia flakes easily with a fork.Serves 2.



Brown Rice Recipe
Cook Time: 12 minutes
Ingredients:
1/2 cup chopped onion ( I used red onion)
1/4 cup finely chopped green pepper
1/4 cup butter or margarine( I used 2 tsp olive oil)
1 can or jar (4 ounces) mushroom pieces
3 cups cooked brown rice (I used 2 cups)
3/4 teaspoon seasoned salt
1/8 teaspoon pepper
1 tsp garlic powder
1tsp onion powder

Preparation:In a skillet over medium low heat, melt butter. Cook chopped onion and green bell pepper in butter for 4 minutes. Add remaining ingredients; cook until hot and lightly browned, stirring occasionally.Serves 4 plus I had some leftover for lunch tomorrow

New Idea!!

So I follow several food blogs and at this http://www.tasteandtellblog.com/ she reviews a cookbook each month and then gives one a way each week. Well I love this idea since I have tons of cookbooks that I hardly use I figured I would and could do this. Well I bougth a new one today at walmart and I have found several recipes that I love from this book that I want to try. Healthy Chocolate Chip Cookies

So my husband has been in Dallas trying to get hired for a police job. Due to him passing all the aspects of it so far I decided to make him some cookies yet I did not have any whote flour but did have whole wheat flour that I need to use before we move. I took the recipe off the back of a chocolate chip bag but made some adjustments.

2 1/4 cup whole wheat flour
1 tsp baking soda
1/2 tsp salt
1/2 cup butter
4 oz applesauce
1/2 cup sugar
1/2 cup brown sugar
1 tsp vanilla
2 eggs
1/2 cup chocolate chips
1/2 m&m's

1. Heat oven to 375
2. Stir together flour, baking soda, and salt. Beat butter, sugar, brown sugar and vanilla untill creamy. Add eggs;beat well. Gradually add flour beat well. Stir in chocolate chips and m&m's . Drop by rounded teaspoon onto cookie sheet.
3. Bake 8 to 10 minutes. Makes about 5 dozen.

Oreo Pie!!! Yummy

So I got this recipe from another blog. You can go here to check out this recipe plus tons others. I made her sugar cookie bars earlier in the week and they were yummy. Here is the recipe for Oreo Pie. I did modifiy a tiny bit because I had alot of the filling left over.


Ingredients
1 Oreo Pie Crust
12 Oreo cookies
8oz Cream Cheese, softened
1/3 cup sugar
2 cups whipped cream(Next I will only use a 1 1/2 cups)

Directions
In a small bowl, smash up 12 of the Oreo cookies...Set aside. In a medium bowl using a hand mixer, combine the cream cheese and sugar...Beat until light and fluffy. Add in the whipped cream and the smashed up Oreo cookies...Then use a rubber spatula and combine gently until well blended and the cookies are distributed throughout. Spoon into the Oreo pie crust and refrigerate about 2 hours or until firm.

Cheeseburger Biscuit Bake

Here is a quick and delicious recipe. I got this from a slow cooker book.

Cheeseburger Biscuit Bake
1 1/2 lb ground beef
1/2 c onion minced
1'4 cup ketchup
1 (8oz ) can tomato sauce
2 cups cheese, shredded
pillsbury biscuits, 10 per serving

Ground beef and onion together. Drain, add ketchup and tomato sauce. Prehat heat oven to 400. Lye half the meat mixture and sprinkle with chesse, then repet. Add biscuits and bake for 18-22 minutes.
*I only baked mine for 15 because the biscuits were getting hard.
* Hubby said not so much ketchup but I liked it. Add according to taste.

Vegeterian Stuffed Peppers

I had 2 green peppers in my my fridge that I knew would go to waste if I did not use. For this reason I made a meatless version of green peppers. Any Veggies can be used. I was able to make enougth stuffing for 2 huge for peppers yet, it could fill 4 smaller size peppers.

Stuffed Pepper
2 large green peppers
1 c rice
1/2 cup corn
1/2 cup black beans
1/2 cup diced tomatoes
1 (6oz) can tomato sauce
1 (6oz) can mushrooms
1/4 cup cheese

Clean the peppers, blanch in hot water for 5 minutes. While these are cooking combine ther remaining ingredients. Preheat oven to 350, when peppers are done stuff with rice mixture and bake in oven for 20 minutes. Sprinkle with chesse and bake 5 more minutes.

Pumpkin Muffins

I know that it is the wrong time of the year for pumpkins but I still had a can from Thanksgiving so I decided to make chocolate chip pumpkin muffins.


Chocolate Chip Pumpkin Muffins

Ingredients
3/4 c sugar
1 1/2 cup flour
3/4 t baking powder
1/2 t baking soda
1 t pumpkin pie spice
1/4 t salt
1/4 cup oil(I used 4oz applesauce)
2 eggs
1/4 cup water
3/4 c canned pumpkin (1/2 of 15 oz can)
1/2 cup chocolate chips

Directions
Preheat oven to 400. Grease 12 medium muffin tins, or 6 jumbo muffin tins. Mix all ingredients with hand mixer. Bake for 20-25 minutes (a little longer for the jumbo muffins!)I was able to make 18 small muffins. Enjoy

Pizza in a Pot!!

So I am a very busy person. I work part time, I am a full time mom, and a fulltime student plus I am married to a very supportive man. For this reason I am alawysa looking for great recipes that can be cooked in my crock pot. My husband is not a big fan of the crockpot but I am so I try to cook in it 2 -3 times a week. This recipe I got from my Taste Of Home slow cooker cook book. It is yummy and taste just like pizza with the pasta. Enjoy

Pizza IN a Pot
1 1/2 lb ground beef
1 medium green pepper chopped
1 medium onion chopped
1 can (15 oz) tomato sauce
1 jar (14 oz) pizza sauce
2 tbsp tomato paste
3 cups spiral pasta, cooked and drained
2 packages(3 1/2 oz each) pepperoni
2 cups shredded mozzarella cheese

In large skillet cook the beef, green pepper, onion over medium heat until meat is no longer pink:drain. Stir in the tomato sauce, pizza sauce, and tomato paste.

In a 5 qt slow cooker, layer the pasta, beef mixture, pepperoni, and cheese. Cover and cook on low for 3-4 hours. Server with a salad and garlic bread.

Denny's-Style French Toast

Ingredients
4 eggs
2/3 cup whole milk
1/3 cup flour
1/3 cup sugar
1/2 teaspoon vanilla
1/4 teaspoon salt
1/8 teaspoon cinnamon
6 slices Texas toast thick bread
3 tablespoons butter
powdered sugar
butter
syrup

Directions
Mix together the eggs, milk, flour, sugar, vanilla, salt& cinnamon.
2Heat a large skillet, or griddle.
3When the skillet is hot, add 1 tablespoon butter.
4If the butter smokes, your pan is too hot; turn down the heat.
5Dip each slice of bread into the batter for 30 seconds on each side.
6Let some of the batter drip off, then put in skillet.
7Cook each slice 1 1/2-2 minutes per side until each side is golden brown.
8Add more butter, if necessary, to cook all of the slices.
9To serve, put on plate, dust with powdered sugar. Serve with butter & hot syrup.

Parmesan Chicken Tender

So last night for dinner I made chicken tender. To save money we have been trying to save money so instead of McDonald's we had homemade food. These were quite tasty and very Juicy. I made two pounds and I think we had 4 left. So here is the recipe. I serve it with Mac and cheese.

Parmesan Chicken Tenders
2 pounds tenderloins
1 cup Italian bread crumbs
1 cup Parmesan cheese
4 tsp Mayo

Combine the bread crumbs and Parmesan cheese together. Mix chicken and Mayo until well coated. Add chicken to bread crumb and cover completely. Preheat oven to 350. Spray a cookie sheet with cooking spray. Place chicken on cookie sheet and bake for 10 minutes on one side. Then flip all chicken and bake additional 10 minutes.

Cheesecake Cookies

So my husband loves cheesecake but a actual cheesecake takes hours to make so I found this recipe for cheesecake cookies. Super easy and taste like cheesecake.Enjoy

Cheesecake Cookies
1 cup cream cheese, soft
½ cup butter, soft
3/4 cup sugar
1 egg
¼ tsp salt
¼ tsp baking powder
1 1/4 cup flour

Preheat oven to 350F. Line a baking sheet with parchment paper.In a large bowl, beat together butter and cream cheese. Gradually beat in sugar at medium speed until light and fluffy. Beat in egg and salt.Whisk together baking powder and flour in a small bowl and, mixing by hand or at low speed, add to cream cheese mixture.Drop by rounded tablespoonfuls onto prepared baking sheet.Bake at 350 for 12-14 minutes, until the bottom edge just barely turns brown.Makes about 3 dozen.

Butterfinger Cookies

I have seen this recipes several times on several different blogs but never thought to make them. Yet, this past week I decided to try my hand at them. I can honestly say are one of my favorite cookies. I am going to try in the coming weeks to make them with resse's. One thing I would change is to add a few more butterfingers(I used small ones). Hope you enjoy


BUTTERFINGER COOKIES INGREDIENTS
1/2 c. butter, softened
3/4 c. sugar
2/3 c. brown sugar
2 egg whites
1 1/4 c. chunky peanut butter
1 1/2 tsp. vanilla extract
1 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
5 Butterfinger candy bars (2.1 ounces each), chopped
DIRECTIONS**Cream butter and sugars. Add egg whites; beat well.
**Blend in peanut butter and vanilla.
**Combine flour, baking soda and salt; add to creamed mixture and mix well. Stir in candy bars.
**Shape into 1 1/2 inch balls and place on greased baking sheets. I use parchment paper instead and highly recommend it over greasing the pan. The cookies come off the paper without any problem and you don't have to wash crusted on cookie bits from the baking sheets.
**Bake at 350 degrees for 10 to 12 minutes or until golden brown. Cool on wire racks.

Mac and Cheese Casserole

MY husband loves mac and cheese but I am not a huge fan of it.When he returned from Iraq he begged me to make it. Well it has taken me over 6 weeks but we had steaks for dinner tonight so I decided to make it. Needless to say this is loaded in calories.

Mac and cheese casserole

8oz elbow macaroni, uncooked(I usually use 2 cups)
1/4 cup butter
1/4 cup flour
2 cup milk
6 oz Velveeta (I use 8 oz plus 2 additional oz for the top)

Preheat the oven to 35f. Cook macaroni according to package directions. Meanwhile in large saucepan melt the butter. Whisk in flour to make paste. Gradually add the milk. Bring to a simmer over high heat while stirring. Add cheese reduce heat to low. Stir in cooked macaroni and then put into a greased baking dish. Bake for 25 minutes. Add additional cheese and bake 5 more minutes.

Unstuffed Pepper Soup!!

I am a huge soup fan. I alos love stuffed peppers but I rarely eat them because the DH does not eat vegetables at . So when I have craving for stuffed peppers I make this. I usually make a huge batch and freze a bunch so I can have it when ever. I have modified it but if you want the original recipe leave me a comment and I will get it to u.

Unstuffed Pepper Soup

1/2lb ground turkey
2 large green peppers chopped
1 can beef broth plus one cup water
1 can v8 concentrat
1 can diced tomatoes plus one cup water
1 can mushrooms, drained
1 cup rice cooked or you can add uncooked to the recipe

In dutch oven ground turkey, drain. When cooked add all other ingredients except rice (unless you are using uncooked rice). Bring to a boil and at this time you can add uncooked rice. Simmer for 30-45 minutes. If using cooked riced add in the last 10 minutes.

My mixer!!

Well after 5 years of marrige my husband has fianlly bought me a stand mixer. So needless to say I have been busy all weekend.

I made 2 cheesecake recipes and a blueberry recipe.

The first cheesecake recipe is just a new york style recipe. I did not make the crust which is why I had a little bit left over.

Cheesecake
3 (8oz) black of cream cheese
1 can sweetned condensed milk
2 tsp vanilla
2 eggs

Preheat oven at 300 degrees. In mixer beat cream cheese until fluffy. Add condensed milk and beat until smooth. Add vanilla and eggs until combined. Put into prepared crust and bake in the oven for 60 minutes. Once done open oven door and let cool in oven for 60 minutes. Referigate for 6 hours.

The next recipe I made was leftover from the above recipe.

Nutmeg cheesecake cups.

Filling
1 Cup leftover cheesecake from above

Crust
1 cup flour
1/3 c sugar
1/2 tsp nutmeg
1/4 tsp salt
1/2 butter, softened

Combine the first four ingredients together until combined and then add butter until the mixture looks like coarse crumbs.

In greased small muffin pan(24 holes) roll dough into small balls press into holls. Bake in the oven at 350 degrees for 10 minutes. Let cool 5 minutes. Add 1 tbsp of cheesecake mixture on top of crust. Let bake for 30 minutes at 300 degrees.

My last recipe of the weekend is

Blueberry Cream Cheese Muffins

1 box white cake mix
1 cup milk
1/3 cup oil
3 egg whites
3 oz cream cheese
1.5 cup blueberries

Combine first 5 ingriendents in mixer for 2 minutes. Add blueberries. Divide into muffin cups and bake for 20 minutes at 375 degrees.

Will make 24 muffins
