Smores Cookies

Around here we are getting ready to move!! Due to this I have been using up everything I have in the house. Well I had a bag of marshmallows that I needed to use!! After searchign several recipes I found this recipe at Chocolate chip marshallow cookie which I renamed smores. I only had a tiny cookie due to my diet but man they are wonderful!! I will be giving most of these away to friends but I am sure my kids and husband will love!! I did modify some and will include in Italics!


INGREDIENTS
1 cup shortening (I used butter)
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs (used egg beaters)
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups semisweet chocolate chips
3/4 cup chopped walnuts (did not have any)



DIRECTIONS
In a mixing bowl, cream shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture. Stir in marshmallows, chips and walnuts. Spread into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 350 degrees F for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars

Healthy Chocolate Chip Cookies

So my husband has been in Dallas trying to get hired for a police job. Due to him passing all the aspects of it so far I decided to make him some cookies yet I did not have any whote flour but did have whole wheat flour that I need to use before we move. I took the recipe off the back of a chocolate chip bag but made some adjustments.

2 1/4 cup whole wheat flour
1 tsp baking soda
1/2 tsp salt
1/2 cup butter
4 oz applesauce
1/2 cup sugar
1/2 cup brown sugar
1 tsp vanilla
2 eggs
1/2 cup chocolate chips
1/2 m&m's

1. Heat oven to 375
2. Stir together flour, baking soda, and salt. Beat butter, sugar, brown sugar and vanilla untill creamy. Add eggs;beat well. Gradually add flour beat well. Stir in chocolate chips and m&m's . Drop by rounded teaspoon onto cookie sheet.
3. Bake 8 to 10 minutes. Makes about 5 dozen.

Pumpkin Muffins

I know that it is the wrong time of the year for pumpkins but I still had a can from Thanksgiving so I decided to make chocolate chip pumpkin muffins.


Chocolate Chip Pumpkin Muffins

Ingredients
3/4 c sugar
1 1/2 cup flour
3/4 t baking powder
1/2 t baking soda
1 t pumpkin pie spice
1/4 t salt
1/4 cup oil(I used 4oz applesauce)
2 eggs
1/4 cup water
3/4 c canned pumpkin (1/2 of 15 oz can)
1/2 cup chocolate chips

Directions
Preheat oven to 400. Grease 12 medium muffin tins, or 6 jumbo muffin tins. Mix all ingredients with hand mixer. Bake for 20-25 minutes (a little longer for the jumbo muffins!)I was able to make 18 small muffins. Enjoy
